Blueberry Boy Bait

Last weekend was all about blueberries.   I found an organic blueberry farm not too far away and my little man and I spent a very hot morning picking and eating berries.  It was glorious!

So with all these fresh berries what’s a girl to do but start cooking?  I had been searching for several days for the perfect recipe for my little blue jewels and just happened to stumble across an intriguing recipe for  Blueberry Boy Bait on Cook’sCounty.com.  Just the name alone was enough to make me want to give it a try!  After all who doesn’t need a little boy bait every now and again?

I made a few little tweaks to the recipe including adding some lemon zest to the batter for a fresh pop and changing up the streusel topping.

I won’t lie, this recipe is not exactly what I would call healthy.  In fact if it didn’t already have such a fantastic name I would have called it Blueberry Butter Cake because of the copious amounts of butter involved.  But even a healthy cook likes to mix it up occasionally with delicious cake!  And the blueberries count for something right??

As for the effectiveness of Blueberry Boy Bait – it work as promised on the cutest little boy I know.  He gave the cake two thumbs up and stuck to me like glue asking for “just one more piece, please”.  I finally had to hide the rest on the top of the refrigerator and tell him the dog finished it.

So if you are in the mood for a delicious moist blueberry cake with cinnamon pecan streusel topping or you are in need of some boy bait of your own, give this recipe a try.  I think you will agree it is a tasty treat!

Blueberry Boy Bait

Prep time: 8 minutes – Cook time: 45-50 minutes – Serves: 12

Cake ingredients:

  • 2 cups plus 1 teaspoon all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon table salt
  • 2 sticks (16 tablespoons) unsalted butter, room temperature
  • 3/4 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 3 large eggs
  • 1 cup whole milk
  • 1/2 teaspoon lemon zest
  • 3/4 cup fresh blueberries (You can substitute frozen blueberries, but do not defrost.  Use them frozen so they won’t bleed into the batter as much.)

Streusel ingredients:

  • 3 tablespoons all-purpose flour
  • 1/3 cup pack brown sugar
  • 1/2 teaspoon cinnamon
  • 2 tablespoon butter, room temperature
  • 1/3 cup chopped pecans
  • 1/2 cup blueberries
Preheat oven to 350°.  Prepare a 13 by 9 inch pan by spraying with nonstick cooking spray and dusting with flour.  Set pan aside until ready to use.
Place 2 cups flour, baking powder and salt in a medium bowl and whisk together.
Place softened butter, white sugar and brown sugar into a large bowl.  Use an electric mixer on medium-high to blend until fluffy (about 2 minutes).  
Add the eggs one at time, beating until just incorporated and scraping down the sides of the bowl in between each one.  
Add 1/3 of the flour to sugar and butter mixture.  Mix on medium until well mixed.  Add 1/2 of the milk and mix on medium again until well mixed.  Add another 1/3 of the flour and mix until well mixed then scrape down the sides of the bowl.  Repeat with the rest of the milk.  Then add the last of the flour and the lemon zest and blend on medium until mixed.  
Place blueberries in a small bowl.  Add 1 teaspoon of flour and toss until they are coated.  Add the blueberries to the batter and gently use a spatula to fold the blueberries in.  Spread into prepared pan.  
To make the streusel topping, place 3 tablespoons of flour, 1/3 cup brown sugar, 1/2 teaspoon and 2 tablespoons of butter in a small bowl.  Use the mix to blend on medium high until well mixed.  Stir in chopped pecans.  Scatter remaining 1/2 cup of blueberries over top of the cake batter then do the same with the streusel topping mixture.  
Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.  Let cool in the pan for 15 minutes before serving.

    Thanks for the comment on my spice post. I completely agree about getting into a rut and reaching for the same spices day after day. I haven’t used smoked paprika in ages. Do you have a recipe suggestion??

      Smoked paprika is a great spice. I use it in chili and taco meat when I want that great smoky flavor without heat. I also like to use it on grilled corn on the cob or roasted potatoes.
