Strawberry Vinaigrette Dressing
Saturday’s shameful confession to my week long cooking malaise seems to have been very cathartic. I woke up Sunday morning feeling my old self – inspired to jump into the kitchen and make some delicious food! I kicked off breakfast with my homemade Banana Oatmeal Muffins and by lunch I was already to really get serious and try something new.
I found inspiration in a recipe for a fabulous Strawberry Vinaigrette dressing from “Southern My Way” by Gena Knox. This recipe takes a basic vinaigrette and adds a few strawberries and a nice dollop of honey. It is so simple to prepare but it is absolutely bursting with juicy fresh flavor. I swear it tastes like a little bit of summer poured over a salad.
There are so many salad combinations that would go great with this delicious dressing – think spinach and goat cheese or bibbed lettuce with toasted walnuts. I decided on a Halloumi cheese with pistachios. It was an amazing combo! I will post the recipe for that salad later this week. In the mean time I hope you give this easy Strawberry Vinaigrette Dressing a try for yourself.
Strawberry Vinaigrette Dressing
Prep time: 5 minutes - Makes: about 1 cup
3/4 cup sliced fresh strawberries (roughly 5-6 medium sized strawberries)- 2 tablespoons white wine vinegar or champagne vinegar
- 3 tablespoons honey
- juice from 1/2 of a lime
- zest from 1/2 of a lime
- 1 small shallot, pealed and roughly chopped
- 1/4 olive oil
- salt and pepper
Place strawberries, vinegar, honey, lime juice and zest, and shallot into a blender. Blend until smooth. While the motor is running slowly pour in the olive oil. Blend until full emulsified (everything is very well blended). Season with salt and pepper if needed. Refrigerate until ready to serve.
